PRACTICAL INFORMATION

CATEGORIES

The size of the oysters is identified by a number assigned to it and depends on the weight of the oysters:

  • n ° 5 from 30g to 45g
  • n ° 4 from 46g to 65g
  • n ° 3 from 66g to 85g
  • n ° 2 from 86g to 120g
  • n ° 1 from 121g to 150g


CONSERVATION

If the basket is originally strapped

  • Place it in the bottom of the fridge or cool place
  • Storage between 5 ° C and 15 ° C
  • Optimal consumption from the moment of purchase, and preferably, not to exceed 1 week

If the oysters are in bulk

  • put the hollow shell down
  • avoid water loss
  • under the same conditions as above


DEGUSTATION

A few points to watch out when opening:

  • if the oyster is dry or dirty, set it aside
  • when opening, touch the coat of the oyster with the tip of the knife, if it retracts quickly, your oyster is fresh

Place the oysters in a dish, on a suitable support to prevent water loss (salt, seaweed, honeycomb plate)

Open them only a short time before eating them.
